The April 2006 issue of Auto Restorer had an article about adding A/C
to a '58 Packard Hawk. If you can find it it should give you soe ideas.
Basically, the author used a Geo Metro compressor (really small) and an
aftermarket evaporator core located in the trunk. He did some
fabricating of brackets and tubing connections, but the install looked
fairly compact.
If the GT6 motor is similar enough to the later Spit motors, you should
be able to mount a compressor where the air pump would be located on the
later Spits.

I am in the long process of redoing my 68 GT6. I want to put air
conditioning in it also. I have looked for things that might work,
though I haven't spent a lot of time on it yet. No one seems to have a
kit for it. But Vintage Air (http://www.vintageair.com/) and Hot Rod
Air have (http://www.hotrodair.com/) products that might be able to be
used.
I just ran across TBI products (http://www.tbiproducts.com).
Anyway, if you get any good ideas, please let me know or post it to the
list.
