Depends, but normally the answer is no, don't use a sealant or
adhesive.

Felpro and many others make oem type head gaskets that not only don't
require a sealant, but can fail in a sealant is used.  The clamping
action of the head bolts/studs, and the surface finish of the mating
surfaces are sufficient to hold the gasket in place without problem.

If you are using a solid copper gasket, going without a gasket,
installing a warped head, or some other rather off the wall approach,
then yes a sealant is a good idea, if not a downright necessity.  Copper
sprays are probably the most commonly used in this case.  They work
well, but aren't as blow out proof as the good old evil Indian Head
Gasket Shellac.  However, if you ever have the experience of trying to
remove a head that was put on with Indian Head, you'll know why I called
it evil.
