Instead of a "roll your own" project, your best bet would be to buy a kit
designed to install in the car to hold the phone and provide what you are
looking for. The phone just snaps in and connects to the wring
via the contacts on the bottom of the phone. The kit provides a speaker, a
separate microphone, antenna lead, and wires into the cars power to
power/charge the phone.
Some after market radios (my daughter's Sony and my son's Panasonic??)
have a connection that connects to the cell phone holder. When the
phone is in use, the radio mutes.

The big problem with talking on cell phones is that it diverts attention from
driving, not that you hold it to your ear. For her safety and the safety of
your son, convince her to not talk on the cell phone while driving...
