How can one determine the clearance? Is this an exercise in geometry
or what, or do I just talk to everyone under the sun to find the guy
who has bent rods and valves from valve meeting piston.

There are two important parameters to consider:
will the valves open that far without coil bind. This involves determining
what the valve lift will be and putting a dial guage on the valves and prising
them open to check.
The other is to use an old gasket and install a head, rocker and etc with a
blob of putty spread on top of the piston to see if there's at least .050"
clearance. If not braze a piece of ring to an old valve to use as a cutting
tool to make the necessary room using a drill on the stem.
