In additon to the below paragraph also check the inlet valves / float
valves. Typically , 40DCOE carbs came with a 1.50 valve. There were also
dampened (spring loaded) valves that I found to be restrictive. If you do
find that you have the 1.50 valves then switch to 2.00. That should be
sufficient to keep the bowls full provided you have the volume.

I have found this to be the problem on a few cars that ran perfect until
someone put a number on it.
