Dan,
I like Henckles 4 star also, and have several, but the past few years I've
picked up a few one piece all steel Global knives, made in Japan, good
balance, keeps an edge but kind of pricy. My favorite utility knife is a 5"
Kyocera with a ceramic blade, also kind of pricy, but keeps its edge
forever, almost. Which is good because if you do want to sharpen it you got
to send it back, no charge, but a bit of hassle.
