The gas pedal on a roadster should't be as touchy as described, I would
check the spring on the linkage (right next to the pedal) and see if it
is broken.  There should be a spring on eack carb.The clutch is a
different story (there is a spring on the pedal ,but it's just a light
pedal spring).  The problem is usually weak or broken springs in the
pressure plate.   On the subject of custom steering wheels, years ago I
welded the rim from a custom walnut  wheel to the original spokes of the
Datsun wheel.  The wood covered the welds when it was riveted   back on.
worked great, just something to think about.
