Steve---This subject has come up before from those long-legged among us.
There are several things that can be done, each offering a little more
leg room.

1) The throttle pedal is soft enough to be bent to where you have to
reach an extra 1/2" to give the same amount of throttle input. 

2) The steering wheel can be spaced closer towards you using custom made
blocks and longer bolts. While not adding to the distance between seat
and pedal, it gives knee room, so your leg doesn't always have to be
cocked sideways.

3) The seat runners can have holes  redrilled in them forward of their
original placement. Now the bolts that secure them to the captive nuts
in the floor pan will allow the seat adjustment to go farther back by
this same amount.  
Note that you will lose some of the recline as you move the seat back
approaching  the "new limit".
