I used a Sears butcher block workbench top when building my CNC 
Mill/Lathe stand.
They also sell an 8' stainless steel top. you should be able to drop it 
over top an older work bench surface.

I almost went with 1/4" plate for my main workbench but instead bought 
an Eastwood welding table.
I use it as a 'portal' work surface. With it's removable slats, it makes 
a GREAT frame for odd parts by allowing you
to adjust the slats as needed. I have multiple small tops I 
use...plywood, plexi and a metal sheet for various projects
