Peter,
Sounds like XK Unlimited didn't live up to their contract of "make me a good
price on all the work to get the word out". If $8K is a good price for what
they did I'd hate to see what they charge others. But, as I know of other
places, $4-5K is a fully refurb'd engine, and that includes parts. 

The good news is that there is no estimate or signed contract, which breaks
CA state law and protects consumers from these sort of deals. I would do a
few things:
1. Contact the BBB in San Luis Obispo and tell them your story.
2. Read this

3. Contact http://www.dca.ca.gov/publications/consumer-selfhelp.shtml. File
a complaint.
4. If you paid with a credit card call them and tell them you're filing a
complaint. They'll probably want a copy, but at least they can get your
money back. Money talks louder than words.
5. Get a second opinion of the oil pressure problem from a professional
shop, in writing. And get an estimate of how much it will take to fix it.
