I am a 25 year computer professional and I can tell you that I never have gotten taken online, but hand that credit card to the front desk at a hotel where they have your name, address, card number and the 3 digit code on the back, and you are screwed.  Has happened to me twice.

In Europe, when you pay for dinner the waiter brings a card scanner to your table so the card never leaves your site.  This could be done in the US for a small amount of money.
