I took an experimental approach to this. I filled the dashpots
with 15 wt motorcycle fork oil, and half filled an oil can with
the 15 wt. Acceleration was sluggish, so I added some 20 wt to the
can, refilled the dashpots, and went for another test drive. If
the engine seemed to be running rich on acceleration, I added 15
weight. if it seemed lean, I added 20 wt., changed out the oil,
and went for another test drive. Not sure what the actual
viscosity is, but it works well. Will have to recalibrate the oil
after I change out the carb bushings and shafts.

The real answer is that the heavier the oil you
put into the dashpot, the longer it takes to respond to changes
in the throttle position. While it is opening, the mixture is
richer due to the higher engine vacuum. This is what compensates
for the lack of a Holley-type accelerator pump. The heavier your
car and the less torque your engine has, the heavier the oil you
should run to cover flat spots in acceleration.

I had always heard that you put the exact same oil in the
damper as you put into the crankcase. That's WHY it takes a
little less than 4 qts... So you'll some left to top up the
carbs!
