    Slim chance it may have spun at one time enlarging the hub's inside diameter? That might explain the tolerance you are experiencing

Can someone tell me why the bearing almost falls out when taking the hub apart yet has to be forced in to place upon reassembly?

You may not have to replace the rear seal.  I would put it together with the o-ring and gasket, fill the diff, and see what happens.
