Mike, It is really very simple. Let him send you a check, put the check in
your bank, ask for the bank to notify you when the check has "cleared
collection". This last is very important and means your bank has sent the
check for "collection" and it has cleared for payment. Ask your banker what
this means and explain what you want. Let the seller know that you will only
ship the car or any paperwork after his check has "cleared" being sent for
"collection". Most people get into trouble because they think because the
bank accepts the check for payment that, that means it has "cleared", it
doesn't.   
The only other method I would use is Cash, small bills, non-sequential
serial numbers.
