I've had a similar experience in yankeeland called a fricassee.  A
little on the soup side but gumbolike in the social aspects.
I've been in Louisiana forever and I ALWAYS ask what's in the gumbo.
I don't DO opossum, raccoon, nutria (Rat that can eat your cat).  I've
had squirrel, rabbit, and venison (yummy) but some species are just
too rodential.
