I've used the inexpensive Inkbird PIDs and they work really well.  Very 
easy to set up and they maintain a good temperature band.  I'd recommend 
against a simple thermostat in case you want to try using this at other 
temperatures in the future and also because of likely overshoot with 
just a thermostatic switch.
