I have found the same thing and now try to buy based on what I will need for individual projects rather than automatically buying a 5lb bucket to have it around. The other alternative is to buy the powder and mix it up as you need it. That adds a step, but the nice thing about that it is that you can buy quick setting versions. (But, be aware that it seems like the faster it sets the harder it is to sand!)
FWIW, I have often thought about pouring a layer of diluted bleach on top of used compound to see if that keeps the mold from forming, but never actually tried it.
