[Mini] calculating an RPM / TPS / ADVANCE map for a non fuel-injection min

Good Morning

If I had to create an RPM versus Throttle position Ignition advance map for
a mini with a big single carb, how would you go about creating it without
blowing the engine up?

Is there an additional factor you could use to optimise the map? Maybe a
knock sensor epoxied to the block somewhere?
