I think that the reason for this was likely that that water was  
running too fast for the radiator to properly cool it before it got  
back to the motor, and it wasn't able to remove as much heat. With a  
larger radiator, or multi gallon reservoir for the water, you likely  
wouldn't have encountered any problems.
