Isn't the max average temp in Amsterdam 22 c?
That's far colder than a Sydney Winter.

Run your car at 5,500 - 5,900 rpm consistently for 15 or 20 minutes at nominal
air temperate of 38C, and a track/road  temp of about 45c and then we can talk
further about oil pressure and oil temperature.
You might need to move? To test your theories?
