  Steve,

The temperature gauge will never go beyond 212:F as that is the 
temperature of boiling water, however long you will heat it, it will 
stay at 212:F at standard atmospheric pressure at sea level. It cannot 
rise any higher.
Only when pressurized the water will go to a higher boiling point, see:

So your gauge registered perfectly correct.
