[Fot] Coolant conundrum

You don't say what kind of car. I had a similar issue in my TR-4,
changed head gasket 3 times and then discovered I had a crack in the
head in the combustion chamber.
Sure sounds like a leak from combustion chamber into cooling system from
the description. Temperature spikes after pushing out water is a
classic symptom, the rapid pressurization is a classic symptom.
