John, typically folks use #1 and #4. In that way they get an accurate read on each carb with minimal mixing. The thermisters are installed equal distances from the head, usually 5-6” down the manifold. Angle the thermisters in such a manner that the connecting wires are not likely to create an obstruction.
A dual channel EGT gauge is a great tool for diagnostics and also tuning.
The most accurate temperatures are at the end of a long straight with wide open throttle. Ignore any readings while stationary or at part throttle.
As far as the gauge placement there’s options but all the cars I have built have them mounted on the top of the dash, just outside the field of vision. That way all it takes is a quick glance at the end of a straight.
