Custom piston manufacturers are exactly that, they make pistons to customers specs.
Give them numbers, they supply the rest.
Some of the info that they will want in addition to the basic bore is skirt type, dome configuration, offset if any, compression height, ring width & backspace, top ring land width, pin specs, etc etc. Also be absolutely sure of your finished bore size, and be clear on the piston to wall clearances, it's always best to have the pistons done to slightly oversize, so the last few thou can be taken out of the bore in the final honing to get the correct clearances. Then of course the ring end gap has to be considered as well.
This, or as has been mentioned, a job sheet number.
I deal primarily with JE but the others are pretty much the same.

I’ve ordered a few times from them. The first time I sent the a piston to measure and they replicated it exactly other than bore diameter, and most recently I knew the job number for the piston order make ten years ago by the previous owner, so I just gave them that number and the 0.040” overbore size I wanted.
Some manufacturers I’d contacted required a minimum order of pistons or a certain dollar minimum. Venolia was willing to sell me just two new pistons for a 1936 V-twin motorcycle engine for a very reasonable price.
