[Roadsters] Futofab/vto wheels for my roadster

What is the best size/offset combo for a 69 roadster that is lowered a bit?

I love the look of the panasport wheels on the roadster, and I haven't lowered
mine yet. Do I need to do anything to the fenders before it goes to paint?

I'm doing a bit of research at this point. Has anyone had any experience with
this brand? Or know of others I should be looking at?
