>>How do I remove the axles? Is it just unbolt the four bolts on the end and then pull?

Yes.

>>Are they not held into the differential with anything?

Nope.

>>Why do these cars not have an access plate for the diff?

Uh, because they didn't design it that way. The axle housing doesn't do anything except support the gear carrier assembly. Both the pinion gear and the ring gear mount to the gear carrier. That way you can set up the lash on the workbench and not under the car.

>>Once I have the axles out, will the pumpkin just slide out?

More or less. It's a snug fit and is probably cooked in there pretty solidly. A certain amount of percussive maintenance is usually required to break it loose. Whacking the nose of the diff from various angles with a dead-blow hammer usually works. Position a floor jack under the gear carrier just ahead of the axle housing so the thing doesn't drop on your hand when it comes loose - it's fairly heavy.
