[Alpines] Alpine series II

Hello
  I have a series II that I will be Vintage racing  can I close off the  
heater hose ports on the head and water pump
instead of using a bypass hose ?will it effect the cooling ?
can I also close off the water passages that go through the intake 
manifold  since I will be using a series V  intake manifold
What would be the best way to to hook a catch can  for the oil system ?  
any pics of race ready  alpines   (engine bay shots)
