Just a silly suggestion for you, but in the right hands might be of interest.

That omitted dash light rheostat knob might make a neat pull knob for your emergency hood release, and save the original appearance.

are available?" - I agree with you - part of the joy is in the doing.
I did a similar re-boot of a Spitfire dash, but nearly 30 years ago.
