Colin---The clutch will be easier to disengage when using the lowest hole in the operating arm. It will also mean that the linkage in the pedal box will have to be without much slop, or complete disengagement won't be happening! It's easy enough to move the clevis pin down a hole to try it.
Triumph wanted to use the center hole to keep the pushrod alignment straight beween the Slave Cylinder bore and the operating arm. Some misalignment can put a top load on the bore of the SC, altho it may take a lot of strokes before this could show any extra wear.

On the seats...The adjustment should give about four inches of back and forth movement. If you find the move difficult, try seeing what goes on with the seat removed (two bolts) and the lever is activated. The sliders may need cleaning and a shot of silicon or wax.
