The tracks usually don't care. 

The organization running the event is the one to talk to. We in VSCDA 
prohibit antifreeze. I do not have antifreeze in the pace car. It runs cooler 
on 
water with water wetter in it. Most vintage organizations do not want 
antifreeze 
in the cars because it is extremely slippery on the track-more so than oil. As 
Derek said do everyone a favor and do not use it even if it is allowed.
