I guess the real question here is if one opens a bottle of brake fluid and 
pours some into the car and replaces the cap, can one use the bottle at some 
future date?

While it is true that the fluid is hygroscopic and will absorb H2O from the 
air, the process takes time and a brief period of being open and the small 
amount of air that replaces the amount of fluid that is dispensed do not 
represent 
an amount of water that is worth begin concerned about.

But if you leave the cap off...
