Machine shop woes and other questions

First:  Does anyone know of a decent machine shop in Central Florida.  I
have my 16v head at a shop and it has been there since Friday.  Only to
adjust the valves!!!  It was supposed to only take about an hour, but under
the circumstances I let that go(being the only one the guy ever saw in his
life).  Next I had to go to the Saab dealer to get shims(apparently they
used that engine or close a while, any info on this would be appreciated). 
I spent $75.00 and brought them back to the shop.  He then told me come
back Monday and it would be done(valve adjustment only!!).  When I called
at 2PM, already postponing plans to install it to Monday evening, he said
maybe he could get to it tomorrow.  Ridiculous, how long does it take?? 
Anyway any suggestions would help.  It won't be long before I will be
sending all machine work to relatives in NJ to get it done.  

Next question..  I have a friend that wants to do some mods to a standard
8v TR7.  Cheap is the operative word.  We have +20 pistons and thought
about replacing his.  Will this help?  Look to be regular pistons nothing
special.  Will a set of SU HS6s help and ditch the Zenith Strombergs. 
Looking for what will yield the most for the least.  We already have a
header and free flow exhaust on the car.  

Any help with either problem will be greatly appreciated.
