Since your "bottleneck" will probably be at the head/manifold
attachment point, it would probably be possible to open up a dual
1-1/4 SU intake to facilitate dual 1-1/2 SUs.
Just about any aftermarket manifold is better than factory dog/log.

Also, it seems as though you can mount two 1-1/2 SUs on a Weber DCOE
intake, albeit close together and you may need to drill extra holes or
add something to bolt the carbs to.
