Mar-Hyde is the product that the guys use for interior color
changes/touchups. It is a flexible coating that sprays on.  We have it
here in the trim shops, but you can get it online as well.  I used it on a
1978 Ford PU I had and it worked great, did the arm rests and door
panels...held up very well.
