Paul,

I don't know if this is any help but I'm running a recently re-built stock Mk3,
new main bearings, re-con head, 20/50 Castrol oil and I get 70psi pressure cold
start-up and 60-70psi running >2000 rpm when hot.  The pressure drops to
40-50psi on tickover when hot.  I haven't done enough mileage yet to see how
this changes with greater use but I suspect that the condition of the bearings
is a major factor in maintaining oil pressure.
