Hi Bob,
My '66 doesn't have headrests, so I can't offer any advice about headrests. 
I've had the car for 20 years and in the last 12 (she's been garaged and 
pampered), I've had the stowaway top erected only 6 times. 
I use the tonneau up until I put the car away for the winter.....I cover the 
passenger's side when I'm driving without my SO.
