Cart crash technique is much like bikes (done both).  Get away from the 
cart/bike, try not to tumble/roll and hope you don't hit anything and nobody 
else hits you ...

FWIW, I plan on wearing a neck collar, that Simpson / Cart racing idea is a 
good one. I bet there's
got to be some cart guys that have physical crash techniques...
