I remember back when I worked at an import shop that had a lot of VW
customers. The original VW GTIs, and all the Rabbits really, ran veryk high
oil temps from the factory and it was never an issue.
With modern synthetic oils, or blends thereof, 220F oil temps are simple a non
issue, IMHO.
As to what to do with a cooler after an engine failure?
Toss 'em.
Sacrificing a multi thousand dollar race engine for a hundred odd dollar oil
cooler makes no sense to me.
