Small correction.
Champagne can only come from one specific area in France, the Champagne
area.
Let's say for example a winery in Normandy can legally in France not make a
"Champagne", yes they can make a "bubbly wine", and name it whatever, but
not "Champagne".
In the French legislative system, the region depending names, as Champagne,
Cognac, and others, are legally protected names.
If you look at the labels, you will see "appellation controlee", meaning the
name giving is strictly controlled in France. Is as good as copyright.
Merlot, and some others, are the names of the grape variety and can be used
as long that you use as base that specific grape.
