In my experience, most events are not schools, per se, but structured
"open track events", with the opportunity to have an instructor
drive/ride along. 
The one exception that I know of (there are probably others) is BMW CCA:
their events are very structured, very conservative, with mandatory
instruction (unless "signed-off").
As for commercial schools, try Skip Barber at Laguna Seca and Russell at
Sears Point.
