S3 Engine questions

Hi List

I two questions

1  - I have a head gasket that has been fitted (torqued down) once, only
for about a week, with the engine NOT run during that time.  As you
might expect it looks brand new.  Can I re-use it ?

2 - The engine is stock except for 040 oversize bore/pistons, a 32/36
Weber and extractors.  I am thinking of changing the cam, can someone
suggest a good grind for road use - not too peaky?
