I asked my buddy the building inspector. He says you want 5/8" type X. It has a one-hour fire rating. The X means the paper is self-extinguishing and the gysum is fiber-reinforced.

For fresh spills I mop up as much as I can, pour a glug of mineral spirits on what's left and agitate with a parts cleaning brush. I cover everything with kitty litter and sweep it up the next day.
