Thought process starts at the wrong end! The amount of fluid moved depends not on the MC but on the distance needed to take up the slack at the shoes / pads. Changing to a 7/8 MC doesn't effect that

You can replace the valve stem seals without draining coolant and removing the head. (rope trick) But it is probably almost as quick to remove the head and you get a chance to clean up the combustion

Long shot this Matt, but IIRC there are two lengths of valve stem available. If using the longer one then it needs the spacer under the spring. But I just wonder if the replaced valve was a mis-match
