It's normal for the brake servo to disrupt the idle momentarily when you
change the brake pedal position. In effect, it has a temporary "vacuum
leak" effect as the chambers are emptied of air.
If your idle is already on the edge of dying, then this effect might be
enough to kill the engine.
But I agree, it's more likely that the diaphragm inside the servo is leaking
and must be replaced. In this case, the servo will leak vacuum as long as
the pedal is depressed. Frequently, you can also hear it hissing while
you're holding the pedal down.
