Having done the clutch job on my XKE, by far the easiest and most efficient
method is to drop the engine-trans out the bottom (remove all ancillaries
first like intake & exhaust manifolds).  You then do not have to remove the
bonnet or remove the front frame (which is hazardous as this is half the
car).

Doing a clutch job on any car is a royal pain in the backside but once skilled
and knowledgable with the nuances of a particular car it can be done quickly. 
70 hours of labor sounds like an excuse by the dealer to gouge.
