You've got to get a better search engine! (I like NorthernLight

Go to http://recipes.taronga.com/ and click on "Desserts Pudding", then
"Sussex Pond Pudding" for a recipe.

There's also

it is a simpler recipe, possibly not as good.

I assume the suet they refer to is rendered beef fat ?  Or do the
British normally use it raw ?
