Hi Ken 
at first I thought you wanted an on-off switch for the starter motor !!
but it appears you want an ignition kill switch 
any simple on off switch will work on the wire from the ignition switch to
the coil. but it is simple to overcome by any thief a better way is to
install 3 by 3 way switches this increases the combination of ways the thief
has to overcome to in simple math  to over 81 switch positions that someone
has to try to turn on the ignition. if you want more info or a quick wiring
of the switch idea give me a shout 
Of course if you just want it to make sure the spark plugs won't start the
engine while you are working on it just pull the coil wire off and reconnect
when finished.
