 With the oil you are running, I see nothing wrong with the pressures.
 One of the most common errors weall make on LBC's is failure to service
the oil pressure regulator valve when doing our regular oil changes. 
 This is a hex nut fitting on the side of  the block, above and to the 
left of the filter element container on post '65 models (maybe 66) and on
earlier models, is usually an integral part of the filter housing. It is 
also the location for mounting after-market valve train oilers. 
 It is eay enough to service. Remove the fitting. There is a spring and 
plunger. Be sure all is clean. Swab the inside of the port or maybe even
shoot a SMALL amount of carb cleaner in to wash out suspected crud.
 On ocassion, if an engine has gotten extremely, and I mean very 
extremely hot, the heat can weaken the spring in the regulator, but this 
would tend to lower oil pressure.
 One of my GT6s has had the knocking you describe for over two years now. 
I've been waiting with bated breath for it to give up the ghost but it 
just keeps on going.
 When the small knock becomes a bang. it's time to worry.
