Actually, in the early '90s, a company called Monster Motorsports 
made about 300 or so 5.0L-powered Monster Miatas, so it may be 
possible you saw one of these cars. I drove one several years ago. 
A bit cramped, but a quite a handful.

Other companies still offer conversion kits to install 5.0L in Miatas.
