"Is there any such thing as a double pulley for an alternator?"

Yes; AMK Products lists one - C5AZ-10344-L, Ford used a double pulley on
many AC fitted cars.

You also mentioned that the belt doesn't ride all the way into the
water pump pulley. This is not good; it means you have 2 different pulley
types. The AC uses the older style belt which is wider and the water pump
uses the thinner style belt. Does the belt to the crank pulley sit into
the grooves correctly? You might be able to use the thinner style belt to
get the correct contact area needed for the water pump pulley, I'm not sure
how that will work on the AC pulley. Carry spare belts at all times
